What’s even better about this recipe is we’re adding fresh fruit. Yep, these sweet rolls a fun twist on classic cinnamon rolls. Theyare the are perfectly fluffy, perfectly sweet, and filled with a gooey berry filling consisting of jam and fresh strawberries in place of the cinnamon (but feel free to add a dash of cinnamon too if you wish!).

Covered in a homemade cream cheese frosting, you’ll never want store-bought Pillsbury cinnamon rolls again. Recipe Ingredients

  • Dry Yeast: To help our rolls rise! Be sure your instant yeast isn't expired.
  • Almond Milk: We'll need to warm this between 110°F and 115°F to help activate the dry yeast.
  • Flour: I usedall-purpose flourand I have not tried any alternatives. Sub with caution.
  • Unsalted Butter: Gives the filling that familiar, thick and sticky cinnamon roll texture. This goes in the dough, the filling, and the frosting.
  • Sugar: We want our cinnamon rolls sweet! I used cane sugar which goes better with the strawberries as compared to brown sugar, which I'd use in a traditional cinnamon roll.
  • Fresh Strawberries: Chopped into tiny bits, fresh strawberries are the highlight of our Strawberry Cinnamon Roll filling. If you can't find the freshest strawberries, for this recipe that's okay because once they're baked they'll become a tasty, gooey texture regardless.
  • Strawberry Jam or Preserves: Enhances the strawberry flavor in a spreadable form to coat our cinnamon roll dough.
  • Cinnamon OPTIONAL: So I didn't actually use cinnamon when I made my Strawberry Rolls. The gooey jam and fresh berry combination was perfect as is, but if you want a TRUE cinnamon roll, add a few dashes of cinnamon or cinnamon sugar.
  • Cream Cheese: This will make our icing thick and creamy to complement our cinnamon rolls perfectly!
  • Powdered Sugar: To sweeten the frosting. I recommend against trying to sub in cane sugar. You're frosting will end up with a grainy texture.

How to Make This Recipe

1. First we’ll make the dough for the rolls. Heat milk in a small saucepan or in the microwave to a temperature of 110°F and 115°F (Use a meat thermometer to determine the temperature). Whisk active dry yeast into the warm milk. Let the yeast dissolve and set aside.

2. Add the butter and sugar into a large mixing bowl or bowl of a standmixer. Beat together until the butter is creamed. Pour the yeast and milk mixture in with eggs and salt. Beat together again.

3. Gradually add one cup of flour into the bowl at a time and fold together until a dough forms (if you're using a stand mixer, I suggest the dough hook attachment). You’ll need to use all 4 cups of flour. If the dough is still sticky, add additional flour into the dough in 1 tablespoon increments.

4. Remove the dough from the bowl and place it on a floured work surface. Knead for 6-8 minutes. I suggest continually folding the dough in half toward your body, then pushing down and away with the heel of your hand.

5. Next, take a clean large bowl and spray it with cooking spray. Place the kneaded dough ball in the greased mixing bowl, cover it with a saran wrap or a linen towel, and let it rise for 2 hours in a warm place (Rising tip: when making the dough, turn your oven on at 100°F. When it hits that temperature, turn it off. Place the covered dough bowl in the warm but turned OFF oven).

6. After the dough has risen (about 3-4x in size), it’s time to punch it down and roll it out. On a lightly floured surface, use a rolling pin, glass jar, or wine bottle, flatten the dough until it’s about ¼” thick. It shouldn’t be so thin that you can see through it, but thin enough to hold the filling and roll it.

7. Next, make the filling. Melt the butter in a small mixing bowl. Use a pastry brush to brush the melted butter all over the top of the dough. Sprinkle an even coat of cane sugar on the dough after the butter.

8. Use a spoon or rubber spatula to spread the strawberry jam on the dough. Dice the strawberries into ¼ inch pieces and sprinkle onto the dough as well.If you're using the cinnamon, sprinkle a little bit across the roll on top of the strawberries.

9. Roll your rolls: Starting at the end of one side of the dough, begin to carefully roll it into a log shape. Be sure to do this slowly to ensure the strawberries/jam don’t get ‘pushed’ out of the roll, but tight enough to keep their shape.

Once you’ve formed the Strawberry Cinnamon Roll Log using a serrated knife, slice the log into 18 cinnamon rolls. Approximately 1” cuts. Instead of cutting, you can also use unflavored dental floss underneath the log and pulling upward to sinch off individual pieces.

10. Time to bake! Generously coat a 9x13 pyrex dish AND 8x8 pan (we’re making 18 rolls here). I've linked my favorite baking dish to bake these in below.

Place the Strawberry Cinnamon Rolls into the pans (12 rolls in the 9x13 and 6 rolls in the 8x8) and bake for 25-28 minutes until the outside of the dough starts to turn golden brown. If needed, broil the Strawberry Cinnamon Rolls for 2 minutes at the end of the bake for that extra golden brown coloring.

11. While the rolls bake, make the frosting. Gather all of the frosting ingredients and combine them together in a mixing bowl. Beat (an electric hand mixer works best) until smooth and luxurious frosting forms.

12. Once the rolls are finished baking, top them with icing! I like to frost when the rolls are still warm so it melts a bit creating a glazed consistency. If you’d prefer true, thick frosting, let the Strawberry Cinnamon Rolls cool before adding the cream cheese frosting.

Storage, Freezing, Reheating Cinnamon Rolls

Storing

You can store these Strawberry Cinnamon Rolls in the an airtight container in the refrigerator for up to 3 days.

Reheating

If you’d like to enjoy warm, reheat in the oven (or toaster oven) the next day at 350° for 10 minutes.If you plan to reheat, store the Strawberry Cinnamon Rolls separate from the frosting and add the frosting once you've reheated it.

Freezing

For best results, your Strawberry Cinnamon Rolls must be baked before freezing. Freezing raw dough will mess with the rising process. You can choose to freeze them frosted or unfrosted.

If you keep them unfrosted, you can thaw them by warming for just a few minutes in the oven, and ice them once warmed. Or, you can freeze the rolls completely frosted and finished. Just allow them to cool cover with plastic wrap and foil and store for up to 3 months. Thaw at room temperature before enjoying.

Recipe FAQs

Can I let my dough rise overnight?

Yes! Just ensure that the saran wrap is completely covering the bowl so no moisture escapes. The next morning, bake according to recipe instructions.

Why did my cinnamon rolls turn out so tough?

If your cinnamon rolls are tough, you most likely used too much flour. This dries out the dough and, as a result, it will not bake properly. You do need a floured surface when kneading and rolling out the dough to prevent stick, but try your best not to get an excessive amount of flour incorporated into the dough itself.

Can I still bake cinnamon rolls that didn't rise?

The rise is essential in achieving a fluffy texture. You can still bake cinnamon rolls that don’t rise, but your end product is likely to be very dense. Before calling it quits completely, you could also try dissolving additional yeast and incorporating it into the dough to see if it will rise at all.

What other fruit cinnamon rolls could I try?

Ingredients

For the rolls:

  • 1 package dry yeast
  • 1 cup warm unsweetened vanilla almond milk, 110°F-115°F
  • ½ cup cane sugar
  • 5 tbsp butter
  • 2 eggs, room temperature
  • 1 tsp salt
  • 4-5 cups all purpose flour, divided
  • cooking spray

For the filling:

  • 1 tbsp butter, softened
  • ½ cup cane sugar
  • 2 cups strawberry jam / preserve
  • 1 tbsp cinnamon, optional

For the frosting:

  • ½ cup butter, softened
  • 4 oz cream cheese, softened
  • 2-3 cups powdered sugar
  • 2 tbsp nut milk
  • 1 tsp vanilla extract

Instructions

Make the dough

  • Whisk dry active yeast into warm almond milk. The milk needs to be between 110°F and 115°F. Use a meat thermometer to determine the temperature. Let the yeast dissolve and set aside.

  • Add the butter and sugar into a large mixing bowl. Beat together until the butter is creamed. Pour the yeast and milk mixture in with eggs and salt. Beat together again.

  • Gradually add flour into the bowl and fold together until a dough forms. You’ll need to use all 4 cups of the flour. If the dough is still sticky, add additional flour into the dough in 1 tablespoon increments.

The rolled out cinnamon roll dough is going to be about 3’x2’ in size once flattened. If needed, use a pastry knife to slice the dough in half prior to rolling it out so you’ll end up with two smaller logs instead.
