This is a go-to recipe I've made for years, but I've found these modifications really take it up a notch:
• double or even triple all the marinade ingredients except salt for more zip and let the pork mixture simmer until pretty thick and reduced.
• replace the shallots with a whole diced onion, mostly because I always have it on hand.
•mix some lime juice into the sour cream
•top with shredded red cabbage for some crunch and color, and shredded Monterey Jack

For a quick and easy dinner, these were good, though we opted for whole wheat tortillas and did add some shredded cheese to the tacos. I also used fresh minced garlic. Didn't bother pounding the pork - just thinly sliced it and it was fine. Would make again. Hubby loved it.

Delicious . . . everyone loved it! The only thing I did differently was used leftover lemon marinaded pork tenderloin. Sliced is very thin, added the sauce and allowed marinade for an hour. Added the pork mixture to sauted shallots simmered for a a few minutes.

I took my tenderloin and put it in the slow-cooker with the marinade and a little bit of water and let it cook on low all day. A couple of hours before we were going to eat I drained it, shredded it, and added the scallions. I also added some taco sauce and cumin, for additional moisture and seasoning, and let it continue to cook on low until we were ready to eat. Then I sprinkled on the cilantro. In the end they were pretty good and very easy to make.

These were really good. Didn't have shallots so I used thin sliced onions. We don't like sour cream so I think they were a tad dry. Next time I'll try some sort of sauce. Maybe avocado. Served with spanish rice and black beans.

I don't get it. I made this because of the high rating everyone gave it. Maybe because I did not use fresh oregano, but I doubt if that would make that much difference. This was just average, blah, nothing great. I would not bother making it again.

Not sure why these have such great rating...made per recipe, and they were just, "eh". Kind of a lot of prep work for them to not be great. Like some of the other reviewers, I could not taste the heat (and I left the seeds in the peppers). Shrug-I'm sure there are much better taco recipes out there-the search continues.

These were wonderful and super easy to prepare. The only issue I have with any of the CL taco recipes that call for corn tortillas is that they never char up the way they do in the picture without getting hard and crispy.

My husband and I are avid taco eaters and love trying different variations. This recipe was delicious and extremely easy on our busy evening. It should probably be a no-brainer to add your own fixin's (cheese, mexican slaw, sour cream etc..) We ate them as the recipe dictated and loved them. A new favorite!

These were just ok, not as flavorful as I'd hoped. I did use flour tortillas, which are thicker than corn, so think it would have been a bit tastier with corn tortillas. I had some fresh chipotle salsa to top it off with, and that gave it a nice kick of flavor.

Sorry, Completely blahh tacos!!!! I agree with other reviewer, Stacey4808........... way too much prep for what you end up with..........pork & shallots on a tortilla!! I wish I had taken the whole pork loin marinated it with lime juice and seasoning then cooked on the grill, rested, sliced thin and piled on tortillas with fresh lettuce, cheese and pico de gayo, topped with guacamole and/or sour cream. As that is how I usually make them, my husband, friends and I find that is a pork taco worth the effort!!! I make both fresh but If you buy the pico and guacamole ready made it would cut prep to the bone as well.

These weren't great overall. My wife and daughter thought they were too spicy. It just seems like they need more in the tacos than just basically pork, shallots, and chipotles especially with corn tortillas. Even the sour cream and cilantro did not add much. Probably will not make them again.

Sorry, y'all, but this was not voted as a make again recipe at our house. The heat level was good, but it really needed more salt. My kids and husband like most anything, but this was not a favorite. Pluses were that it was easy and might be good with a few adjustments.

Delicious. I have made this several times, and it always tastes wonderful. I usually add a little extra lime as I love the flavor of it. I also leave out the shallots and onions, still tastes awesome.

We really liked this. I used some leftover smoked pork butt we'd bought for a local fundraiser (better than cookie dough, right?) - just shredded it and let it sit in the marinade for a couple of hours, then sauteed the shallots and added the pork to warm it up. Marinade really brightened the kind of tasteless pork. Charred the tortillas as suggested. Grocery didn't have fennel so I just made a radish-cabbage slaw. Nice, light meal.

Made to recipe, supereasy. Prepped the pork & seasonings and marinated for a few hours in the fridge. Caramalized the shallots earlier in the day, too, so everything came together really quick at dinner. Served with CL's grilled corn with roasted jalapeno butter & a side of black beans. Very nice meal.

very easy and delicious recipe. I also marinated the pork for about an hour. I doubled the cilantro and let people help themselves to the sour cream and carmelized red onion. (I didn't have shallots on hand) I also set some pork aside for the kids omitting the chipotle - they loved it too! will definitely make again. We used both corn and flour tortillas.

Made this tonight - wonderful!! I pounded pork, rubbed with lime and seasonings, and marinated for 2 1/2 to 3 hours. We grilled whole, and then sliced very thin. I served with corn tortillas, pineapple salsa, and avocado. Really great, everyone loved it. Will definitely make again.

I liked this it was quick and easy to make for a weekday meal. I didn't feel the heat but my husband thought it was too spicy. I served it with the side salad that was featured in the CLM. I would make this again and maybe try to tone it down for my husband and heat it up for me.

Despite all the fantastic ingredients, we found this to be sort of bland. I couldn't taste the seasoning on the pork at all - not sure why. We do like things super spicy, so maybe this just wasn't potent enough for us. I mixed in some extra chipotle and adobo sauce with the sour cream, to spice things up, but it didn't help much. Perhaps I'll try it again with all the pork seasonings doubled.

My husband and I both thought this was to die for! Seriously, it was amazing. I made two changes: first, the only pork tenderloin at the store was flavored with "peppercorns," but it was so good and I think it worked to my advantage. Second, instead of putting in all the ingredients with the pork and cooking it up, I let it marinate in the fridge for about 4 hours. It's simple, which allows the lime, garlic, oregano and chipotle peppers come through. This is going to be one of my new go-to recipes!

I made this recipe exactly as written. The flavours were very good but I found the pork just a bit on the dry side. I would have liked it to have more of a sauce, or maybe just more than 1 1/2 t of sour cream per taco. Other than that though, really enjoyed it. I served with the Radish and Fennel Salad as per the magazine, but left out the olives.

I actually made the meat portion of the recipe ahead of time as I knew I had a busy week and needed some meals where I could quickly throw together. It was fast to put together and the flavors were amazing - but do be careful if you have people that dont like it a bit spicy - which isnt really an issue in my house. I am definately going to put this in the rotation of recipes... I also served this with a Red Cabbage Cilantro salad which was a nice cool side with the heat of the tacos

This recipe had great flavor. I used 1 8" whole wheat tortilla instead of 2 6" corn tortillas & substituted fat free Greek yogurt for the sour cream. I would eat these again but probably wouldn't go out of my way to make them.

Loved this recipe. Definitely a keeper. Toned down the chipotle for the kids and they liked it a lot. I would prefer to have it with a bit more kick as the recipe states... but happy to have a meal the whole family likes.

Really delicious! I increased the lime rind, juice, garlic and chipotles (my family likes spicy) and marinated pork for a couple hours in the fridge. I also sauteed the shallots until they were almost caramelized (about 8 minutes) for personal preference. It took longer than 3 minutes to get rid of the pink, but some of my pieces might have been thicker than others. Served with chunky guacamole and chips. Love to try with chicken!

This recipe is a definite keeper! It took me a while to prep, but it cooked very quickly. I didn't flatten the pork; I just sliced it thinly. I served it with the radish and fennel salad that was featured in CL, but I ate one bite and couldn't eat any more. It was not a good combination of flavors for me! I'll definitely make the tacos again though.
